Kadhi - Pakoda - Curry

Kadhi is a recipe made in almost all parts of India - Gujarathi Kadhi Recipe (Dahi-Besan-Kadi), Gujarati Kadhi, Majjiga Pulusu (Telugu), Mor Kuzhambu (Tamil).. all are the same.

It just how it is made , with what ingredients you prepare - makes all the difference. Put drumsticks, vegetables, coconut, soya chunks, pakodas, gourds.... Our creativity is the limit and believe me all taste equally GREAT!

So, Here I present my Kadhi-Pakoda-Curry:



Ingredients:

1. Buttermilk - 1 cup
2. Besan / Chana Dal powder - 1/2 tbsp
3. Ginger paste - 1/8 tbsp
4. Salt - to taste
5. Turmeric - 1/8 tbsp
6. Chilli powder - 1/4 tbsp
7. Chopped Tomato - 1



For Pakodas:
1. Besan - 2 tbsp
2/ Chopped onion - 2 tbsp
3. Salt - to tase
4. Chilli powder - 1/4 tbsp
5. Turmetic - 1/8 tbsp

Tadka:
1. Oil - 1 tbsp
2. Mustard Seeds - 1/2 tbsp
3. Curry leaves - few
4. Hing - 1/8 tbsp

Preparation:

1. Whisk the following with an egg beater: Buttermilk, besan, gingerpaste, salt, turmeric and chilli powder and keep aside.

2. Mix all the ingredients listed for Pakodas with little water to make a paste. Make bhajiyas out of this paste by frying them in oil.



3. In a pan, heat some oil, add hing and mustard seeds - let them splutter. Then add tomatoes, curry leaves and when half cooked add buttermilk mixture and let it boil on low heat for 5 to 10 mins. Stir continuously so that the besan doesn't stick to the pan.
Note: Its advisable to not to add salt. Add it after the mixture is properly cooked and the raw taste of besan is gone.

4. When the buttermilk is cooked, add the pakodas and let them soak in the kadhi for few mins.

5. Serve with hot rice. It tastes yum...:)

I served this Kadhi Pakoda Curry with a simple Bhindi Curry ( Oil, Bhindi, Tadhka, Salt, Turmeric, Chilli powder) and Tomato Dal ( Oil, Boiled toor dal, Tomatoes, Tadhka, Salt, Turmeric, Chilli powder) to go with it. Just to make it a sumptuous meal.

Vaangi - Ulli Theeyal



Here I present my first recipe : " Vaangi- Ulli Theeyal " , a different version of Theeyal.

There are many yummy Theeyal recipies on various blogs - Anita's "Ulli Theeyal", Priya's "Theeyal Curry", Gini's spicy "Brinjal Theeyal" and many more.

I tried to make this recipe simple and easy to make. I used brinjals/eggplants and onions to make this version of Theeyal; To make it more nutritious, we can any vegetables available. After all, food is all about taste and health, Isn't it..:)

Here goes the list of ingredients

1. Brinjals - 2
2. Onions - 2
3. Oil - 4 tbsp
4. Salt, turmeric - as per taste
5. Chilli powder - 1 to 2 tbsp
6. Green Chillies - 2 to 3
7. Atta flour - 1 tbsp
8. Mustard seeds - 1/2 tbsp
9. Curry leaves - few
10.Tamarind paste - 1 tbsp
11.Hing - for taset

For Ground Masala

1. Coconut - 1 cup/ 4 tbsp
2. Tomaotes - 1
3. Coriander seeds - 1 tbsp ( or coriander powder - 1 tbsp)
4. Cumin seeds - 1 tbsp
5. Milk - 1 cup
6. Curry powder - 1/2 tbsp
7. Redchillies - 2
8. Sugar - 1/2 tbsp

How to make:

1. Saute the finely chopped onions and brinjals in 1/2 tbp of oil till light brown color and keep aside
2. Again, in 1/2 tbsp of oil, roast the "Ground Masala" items and then grind till fine paste. Add water if needed.
4. Mix the atta flour in 3 tbsps of water to make a fine paste. This gives nice consistency to the dish.
3. Now, in a pan, take 2 tbsp of oil and add mustard seeds. Let them splutter.
then add chopped green chilies, sauted onions and brinjals with ground paste, atta flour paste, hing, tamarind water, turmeric, salt and sugar. Let this mixture simmer for few minutes.
4. Garnish with coriander leaves.
5.Serve with rice and ghee.
