Simple Pulagam

It was quite a hectic Saturday for me. I was working my ass off (literally) all-day as there is an important deadline to meet at work. But, that didn't stop me from sticking to my resolution - 'to eat healthy and sleep well', no matter how busy I am. :)

..and as per my ongoing project - 'A week without shopping', I have to complete my pantry stuff first. Hmmm, my first thought for breakfast was a healthy 'Vegetable French Toast'. So, that was it and with (2 servings of veggies and spinach + eggs+ bread), it was very filling.

For lunch (and dinner), with limited time available on hand, I wanted to cook something simple yet tasty. I finally zeroed it for a Simple Pulagam (rice + moong dal) a.k.a Khichdi. :D




Simple Pulagam

2 cups Rice, uncooked, thoroughly washed
1 cup Moong dal, washed
1/2 Onion, chopped finely
1 clove Garlic
Salt to taste
1/4 tsp Turmeric
1 bay leaf
1/2 tsp Curry powder
1 tsp Oil
1/2 tsp Butter

Heat oil in pressure cooker and saute onions & garlic until golden brown. Add rest of the ingredients except butter and cook for a min. Finally add butter, mix well and let it cook for 2 whistles. Serve once the pressure is off with raita or pickle, just I did. Yummy!
