Indian Style Scrambled Egg (Masala Ande Ki Bhurji) Flatbread Pizza Recipe

“Those pizzas I ate were for medicinal purposes.”  ~ Amy Neftzger

Indian Style Scrambled Egg (Masala Ande Ki Bhurji) Flatbread Pizza

It has started to rain again in Hyderabad and the weather has become cool enough to crave for a hot pizza. I don't eat it often but when it rains, my tastebuds start to act and I inadvertently find myself picking up phone to order one. In the beginning of the week, it was a pizza hut crown pizza which was on my to-taste-list-again for a long time. What a lovely combination it is. It is too big for one person but my sister helps me out by sharing a few slices. that was last Sunday, a pizza enjoyed with the help of few coupons. :-)

As the week came to an end and the rain didn't stop, I thought it was perfect time to try a new recipe which has been on my mind for quite a long time. The end result was undeniably good, a thin-crusted flatbread pizza topped with masala scrambled eggs and cheese. What's not to like? If you have the quick pizza dough on hand, it will take less than 30 mins from kitchen to table. I am yet to try, but am sure even store bought pizza dough works well for this recipe. Enjoy!

Ingredients:

a small ball of quick pizza dough (recipe here)

For Masala Bhurji -

2 eggs
1 small onion, finely chopped
1 tomato, chopped
a pinch of turmeric
1/2 tsp cumin seeds
1 garlic clove, minced
1/4 tsp red chilli powder
salt - to taste
1/2 cup grated cheese
1 small chopped green chilli (optional)
chopped coriander leaves
1 tbsp olive oil

Preparation:

1 - In a bowl, beat eggs.

2 - Heat oil in a kadai, add cumin seeds and garlic. Once they start to sizzle, saute onions until they are translucent. Then add tomatoes (and green chilli, if using) along with turmeric, salt and red chilli powder. Mix well and cook until mushy.

3 - Add beaten egg and mix everything until its lumpy.

4 - Cook just like scrambled eggs for 4 to 5 mins. Let there be some moisture or else while baking the scrambled eggs will become too dry on the pizza. Turn off heat and slightly cool.

5 - Preheat oven to 200 C or 400 F. Roll the pizza dough to thin pizza. The thickness, size and shape is totally up to you. I wanted it thin this time like a flatbread. Evenly spread the scrambled egg mixture and sprinkle some coriander leaves + cheese. Sprinkle some cornmeal on a baking sheet and place the pizza. Bake for 10 to 12 mins until the cheese melts. Cut and Serve!
