WBB: Akoori

Once again I am back with a yummy egg recipe. This time a Parsi breakfast entree - Akoori.

Akoori - Parsi style eggs



Adapted from here.

2 Eggs
1 tsp Oil or clarified butter
2 Garlic cloves, crushed
1 tsp crushed ginger
1 medium Onion, chopped
1 handful of fresh cilantro, chopped
1 tbsp tomato puree
2 tbsp Milk (Rec: light cream)

Preparation:

Saute the onions in oil/butter until soft. Add the garlic and ginger and Cook for a minute. Add tomato puree, cilantro and cook until it forms a mixture, the consistency of gravy. You may need to add a few tbsp of water if needed.

Add the milk, stir in and crack in the eggs. Scramble to the desired consistency.

Serve with any kind of bread.
