[VeganMoFo 2016] Zucchini Carpaccio Recipe

Day 4 of ongoing VeganMoFo 2016 challenge is here and today I am about share a quick, no-cook Zucchini salad recipe I saw on NYT Cooking. I am also super kicked and doing a happy dance for another reason. Do you know the last time I posted FOUR recipes in a month was way back in 2015. Yep! it is always the case that I start off the month with best of intentions, slowly loose mojo and never share more than a recipe or two. Here's hoping at least this year (unlike 2014), I will successfully finish this VeganMoFo challenge. Read more and get this refreshingly easy recipe for Zucchini Carpaccio.

[VeganMoFo 2014] Lemon Rice | Nimmakaya Pulihora Recipe

My first memory of my grandmother's cooking is - how she made a simple, yet flavorful lemon flavored rice one night out of just a bowl of stale rice. Things were scarce, times not-so-luxurious back then and being judicious about groceries was the only way to keep the family of five well fed and nourished. Money doesn't define us as human beings only compassion will, she used to say. Whenever I make this Lemon Rice at home, I think of her immense love and exuberance. When I am 60 years old, even if I manage to imbibe half of her qualities, I would feel really accomplished in life!

Dhaba Tadka Mix + Dhaba Style Urad Dal - a Step by Step Recipe

Looks like those hot, summer days which I have been complaining in almost every post since past few months are on the move. Humid, sultry nights are being slowly replaced with breezy, chilly ones and trust me, am not complaining at all. I dread hot days and simply love winters as am a through & through wrap-a-shawl-and-have-a-cup-of-hot-tea kinda girl. :-)

Besan Papdi Katori Chat | Chickpea Flour Shells with Sprouts Filling Recipe

I am going to share a secret with you all today.

I have never played Holi (the festival of colors) ever in my entire life (except for once when I HAD to stay back at my friend's place). Neither did TH. Yes, we do believe in its true essence which is victory of good over evil, a common theme that runs through almost every Indian festival. Holi also waves goodbye to winter (which we never had) and welcomes spring (when is that? Its already so hot!) in a rainbow of its colors...

All my childhood, I have seen my parents lock the front door and all four of us stay indoors, gorging on delicious food, playing games or spend the day watching TV. Putting up a lock outside was important to make believe the outside world we were out of station. The plan worked for quite a few years but later my friends figured out the secret. But still couldn't do anything about it as they used fear the wrath of my father.

Essentially, Holi in our household is synonymous to family time and super delicious meals. With extra time on hand and nothing else to do staying at home, my mother used to make her famous biryani, korma, mirchi bajji along with many other delicacies. This year though, I chose to make something different for Holi. An appetizer that easy to nibble while staying in the house (in my case) and playing with colors (like many of you reading this post!). Both - the katoris and the filling can be made way ahead of time and can be assembled at the very last minute. Doesn't that serve our purpose to stay away from the kitchen during festival time? Yay!

Enjoy!

 Besan Papdi Katori Chat

{Recipe} How to make Besan Papdi Katoris

These shells stay fresh and crunchy when stored in an air tight container for weeks. One can serve almost anything as filling in this recipe. Add little salt to the filling first and taste along with one of the besan katoris. Adjust accordingly.

Makes around 25 katoris

Ingredients:

1.5 cups besan (finely ground chickpea flour)
1 cup rice flour
2 cups chopped greens (I used spinach and cilantro)
1 tsp ginger garlic paste
1/2 tsp turmeric
1 tsp oil
1 tbsp chilli powder
salt - to taste
water
Oil (if deep frying the shells)

simple ingredients - besan, rice flour, greens, ginger garlic paste, salt, turmeric and chilli powder

...this is the trick to cute little shells. Don't forget to lightly oil the muffin cups..

Preparation:

1. In a large bowl, add chickpea flour, rice flour, greens, ginger garlic paste, turmeric, oil, salt and chilli powder. Mix all the ingredients without adding any water first. Then add water little by little and knead into a soft dough. Cover and keep aside.

2. Take a small ball of the dough and shape into shells using muffin cups. I used silicone molds so it was easy to just peel away the shell. One can use a standard non-stick muffin pan too, just be careful while removing the shell out. Repeat the process with rest of the dough. I made a batch of 6 shells at a time, let them rest for about 10 mins (so that they don't break while peeling) and they easily came out of the mold.

Since its festive season and wouldn't mind those extra calories, I chose to deep fry the katoris. If you wish to, you can bake the muffin molds (brush a little oil over them) as-is in a preheated oven (180 C) for about 10-15 mins, until cooked.

3. Heat oil in a kadai. Drop 3 to 4 shells at a time, reduce flame and fry until light golden brown. Don't fry for too long as they tend to gain more color once out and drained for a while. Store these in an air tight container.

..deep fried and ready to filled..

{Recipe} Mixed Sprouts Salad (Filling)

Not just as a filling, this dish also serves as a healthy side dish for rotis or as a quick salad.

..Don't they look super healthy. I love to eat them raw..

Ingredients:

2 cups mixed sprouts (I used green beans and brown chickpeas)
1 medium onion, chopped
1 tomato, chopped
salt - to taste
1/2 tsp chilli powder
1 tsp cumin seeds
1/2 tsp oil
juice of half a lemon

Preparation:

Heat oil in a kadai and add cumin seeds. Once they start to splutter add chopped onion. Saute until translucent and add tomatoes. Cook for few mins, then mix in the sprouts and season with salt and chilli powder. Don't cook for long. The heat from onion-tomato mixture will cook the sprouts. Turn off the heat and add lemon juice. Mix well. Cool.

...as a filling, salad, side dish.. this dish is versatile to be served as anything...

Assemble: When ready to serve, top each of the besan katoris with sprouts filling + some fresh cilantro and serve them on a platter.

...Served! Holi hai!!!!!!!!!!!!!!

{Valentine's Day Special} Watermelon Ginger Limeade Recipe

“Love is that condition in which the happiness of another person is essential to your own.”
~ Robert A. Heinlein, Stranger in a Strange Land

There are different kinds of love - romantic love, selfless love, those enriching relationships which we tend to share with our parents and siblings and above all self love. Yes, loving oneself and acknowledging who we are and how we are is also a form of love which most of us ignore.

Love is also about little things like - To be happy. To be healthy. To have peace of mind. To work towards fulfillment of those cherished dreams. And we really don't need a special day to remember these. Valentine's Day personally is a time when I just pause to get my priorities right and pamper myself and loved ones around me.

Valentine's Day is also a day of color red. - red roses, red ribbons, red colored food, red heart shaped greeting cards and even red colored gadgets. An overload of red stuff I say! Going with the theme, I made a special beverage for you all - Watermelon Ginger Limeade. With just 5 ingredients (water included) one can make this in a jiffy. Forget for just Valentine's Day. This is even perfect as a refreshing drink anytime of the day. :-)

Enjoy!

This drink is perfect for any day actually, especially hot summer days maybe?

Just few everyday ingredients and there you have it!

Couldn't just stop myself from adding all those hearts around ;-)

I am a sucker for teddy bears, did I ever tell you that? ;-)

{Recipe} Watermelon and Ginger Limeade

Serves 4
Adapted from Food and Wine

Ingredients:

4 cups cubed watermelon (rind removed and deseeded)
1/4 cup fresh lime juice
3/4 tbsp grated fresh ginger
1/4 cup water
1/8 cup sugar

Preparation:

In a small pan, combine the water, sugar and ginger and bring to a boil. Cover and simmer over low heat for 10 minutes. Strain the ginger syrup into a small bowl.

Puree the cubed watermelon in a food processor. Strain the puree through a fine sieve set over a bowl. Stir in the ginger syrup and the lime juice.

Fill glasses with ice and add the limeade. Optionally you can garnish with the melon wedges and Serve.

Cheers everybody - To Love!

{Baking} Basil Lemon Sea Salt Shortbread - a Step by Step Recipe

For most of our holiday potluck parties in US, at least one of us would bring a tray full of shortbread cookies/biscuits to the table. A typical shortbread consists of few basic ingredients - flour, eggs, butter, sugar/salt and/or vanilla extract. Rest all are add ons to enhance the flavor of the shortbread itself.

For today's recipe, it is important to use a good quality butter to taste at their best. A shortbread is versatile enough to be used with almost anything and today I chose ingredients such as basil, lemon zest and sea salt.

Make these easy, buttery biscuits to surprise your friends and family.

Enjoy!

Adapted from - Leite's Culinaria

Ingredients:

1 1/4 cup all-purpose flour
1/2 cup whole wheat flour
1/4 tsp salt
2 tbsp freshly grated lemon zest
1 1/2 tsp dried basil (you can use fresh basil if you wish to)
1 tsp (or more) red chilli flakes
1/2 cup unsalted butter (at room temperature)
1 large egg, lightly beaten
2 large egg yolks
2 tsp water
sea salt for sprinkling

Preparation:

1. Stir the flours, salt, lemon peel, and dried basil together in a medium bowl. Add a tsp of red chilli flakes and butter.

2. With your fingertips, rub the butter into the dry ingredients until a coarse, crumbly mixture forms. Beat the lightly beaten egg, egg yolks, and water together. Reserve 1 tablespoon of the egg mixture for brushing. Make a well in the center of the flour. Add the remaining egg mixture and blend together with your hands without kneading the dough together; the dough will look a bit crumbly.

3. Turn the dough out onto a lightly floured work surface. Knead the dough together once or twice, just until it sticks together. Press the dough into a 1-inch-thick disc, wrap in plastic film, and refrigerate until firm, about 30 minutes.

4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a nonstick baking mat. Remove the shortbread dough from the refrigerator, unwrap, and place it on a floured work surface. Press the dough into a 6-by-5-inch rectangle. With a rolling pin, roll the dough into a larger 10-by-7-inch rectangle, about 1/4 inch thick.

5. Cut the shortbread dough in half, forming two 5-by-7-inch pieces. Using a pizza wheel or sharp paring knife, cut into 1/2-inch-wide strips. Carefully place the shor tbreads on the prepared baking sheet leaving a little room between each cookie. Brush the tops with the reserved egg mixture and sprinkle a little coarse sea salt on top.

5. Bake until the shortbreads are lightly browned, about 20 minutes. Transfer to a cooling rack and serve warm or at room temperature. Store the shortbread in an airtight container at room temperature for up to 1 week.

{Quick and Easy Snack Recipes} Papad Potato Rolls - a Step by Step Recipe

If there's anything we, as kids used to look forward to during holidays were those yummy 4 pm snacks my mom used to make. Some days it was just some fruits and a glass of bourvita and sometimes the snack ritual was more indulgent such as deep fried bhajjias, egg puffs etc.

Today's recipe -  Papad Potato Rolls are just perfect for those brunch cravings. Make these for your kids as soon as they are home and you will for sure get some happy smiles back. Would you believe, my dad especially loved these and asked us to make another batch almost immediately. These are just so scrumptious!

a perfect snack for anytime of the day!

the potato filling

Shape each portion of filling into a long roll of about the same length as the diameter of the papads. Dip the papads in water for a few seconds. Put a potato roll on the corner of each papad and roll up.

With a string of thread, tie loosely on both the ends.

ready to be deep fried!

....until light golden brown..

Serve and Enjoy!

{Recipe} Papad Potato Rolls

Preparation Time: 30 minutes.
Cooking Time: 20 minutes.
Makes 10 rolls
Adapted from Tarla Dalal

Serving Suggestions - Mint Peanut Chutney | Basic Eggplant Chutney | Okra Raita and Mint Raita | Madras Tomato Chutney

Ingredients:

10 papads
4 potatoes, boiled
1-2 green chillies, finely chopped
1 tbsp lemon juice
1/4 cup chopped coriander (dhania)
1/2 tsp garam masala
1/2 tsp sugar
salt to taste
oil - for deep frying
few strings of thread

Preparation:

For the potato filling: In a bowl, mash the potatoes and add the green chillies, lemon juice, coriander, garam masala, sugar and salt and mix well.

Divide the potato mixture into several portions and shape each portion into a long roll of about the same length as the diameter of the papads. Dip the papads in water for a few seconds. Put a potato roll on the corner of each papad and roll up.

With a string of thread, tie loosely on both the ends. Optionally, the original recipe uses some besan paste (chickpea flour mixed with equal amount of water)  to seal the edges. But, I found this not so optimal for the filling to stay in tact while deep frying.

Deep fry in hot oil until golden brown. Remove the thread and cut into small pieces and Serve hot.

Weekend Breakfast: Lemon Sevai (Lemon Flavoured Rice Noodles)

This was never supposed to be a proper recipe post for the blog (hence only one photograph). I thought of posting it on my photo blog as I hardly published any (apart from some book reviews) since my Project 365 2011 ended. But, I was so happy with my first attempt that I HAD to write something about it here. :-)

During our many phone conversations, I mentioned to my SIL that I never made sevai, so sent me a packet to try. Today, being a Saturday with some extra time on-hand for a leisurely breakfast, I made lemon flavoured sevai, which turned our super tasty. It is very light on the appetite and quick to prepare.

Idiyappam or String Hoopers is a culinary speciality of many parts of southern India (especially Kerala, Tamil Nadu and Karnataka) and Sri Lanka as well.. Some of my Mallu friends say, it is a common sight to serve these white noodle clusters on a large platter along with side dishes including spiced lentils, kuzhambus and curried meats.

Today am gonna go just basic - boiled sevai with tampering of tadka and fresh lemon juice. Y.U.M!

Ingredients:

3 cups of loosely packed ready made sevai
water
salt
few drops of oil
juice of 1 lemon

For Tadka

2 tsp oil
1 tsp chana dal
1 tsp urad dal
1 tsp mustard seeds
a pinch of asafoetida/hing
1 green chilli, slit and chopped finely
1/2 tsp turmeric
salt - to taste
few curry leaves

Preparation:

1. Bring to boil sufficient water in a big pan. Add few drops of oil (so the sevai don't stick to each other) and little salt. Once its boiling, add the uncooked sevai to it. With spoon, make sure all the sevai is in the water. Cook for just 4-5 minutes. Drain the water in a sieve or a colander and loosely separate the strands.

2. In a wok, heat oil and add chana dal, urad dal, asafoetida and mustard seeds. Once they start to splutter, add green chillies and curry leaves. Add the cooked sevai to it. Season with turmeric and salt. Turn off the heat and add lemon juice. Gently toss around so that everything is mixed in properly. I used my fingertips to mix.

Serve.
