Fried Egg Sambal

Some say they are a work of pranksters, some say they are created by aliens who are trying to communicate some sort of message and a third theory says they are part of a natural phenomenon for which an explanation will be found sooner or later.

Wondering what am I talking about??

A Crop Circle...

As the name suggests, these are some intriguing circular designs made by flattening standing crops in a field. i.e with some their stems bent down, not cut to make these patterns.

I was reading about 'Crop Circles' in a magazine today and was amazed by the mystery surrounded around them.

Here is the glimpse of one such crop circle formed in Windmill Hills, Wiltshire, England in 2002.

Some believers and naysayers say they are work of God, but the truth remains still elusive - its a mystery unsolved!!

Now, talking about today's recipe. This has been in my bookmarks for ages now, and being a sunday, I wanted to have something simple yet yummy!

Meena's Fried Egg Sambal...



Adapted from here.

Ingredients:

5 eggs
1 medium Onion, finely chopped
1 medium Tomato, finely sliced
1 garlic clove, minced
1/4 tsp Turmeric
1/2 tsp Chilli powder
1/2 tsp Coriander powder
1 tsp Milk
Salt & Pepper to taste
2 tsp Oil

Preparation:

1. Heat a tsp of oil in a flat pan and fry the egss one after other, seasoning with salt and pepper. Set aside.

2. In a wok, heat the remaining tsp of oil and saute some garlic & onions, until brown. Add turmeric, chilli powder and coriander powder and fry for couple of seconds.

3. Drop in chopped tomatoes and cook for few minutes, until mushy. I also added a tsp of milk at this stage for a different flavor.

4. Finally mix in the fried eggs and coat the tomato-onion mixture around them. I served this yummy dish as a side with store-bought garlic tandoori naan!

One can add a tbsp of 'tomato paste' as specified in the original recipe.

Paneer Bhurji

I made this 'Paneer Bhurji', sometime back and it was an excellent side dish - an instant hit at my household.

It may be at yours too! try it out then..:))




Paneer Bhurji (Adapted from here)

Ingredients:

2 cups Paneer, thawed & grated (or crumbled)
1/2 cup Bell Peppers, finely minced. (I used store-bought fire roasted bell peppers!)
1 medium Onion, chopped
1 tsp Ginger-Garlic paste
Salt to taste
1/2 medium Tomato, finely chopped
1/4 tsp Turmeric
1 tsp Chilli powder
1 tsp Garam Masala
1 tbsp Canola Oil

Preparation:

1. Heat oil in a saucepan and add onion & ginger garlic paste. Saute for couple of minutes. Stir in chopped tomatoes and cook until mushy.

2. Add peppers, salt, turmeric, chilli powder, garam masala and water if needed. When the mixture is almost cooked, stir in crumbled paneer. Adjust seasonings if necessary.

3. Once done, transfer into a serving bowl & garnish with fresh coriander and serve with some roti or any kind of Indian bread.

Variation: One can add cream for some rich texture.

Did you know..

Do you know whats the significance about October 16th?? there are two special occasions to celebrate on this day.

First one is 'World Bread Day' - which stands for solidarity and also for our ability to share. Bread also symbolizes Power! Garlic Home Fries

As promised in my previous post, this is what I made yesterday as a part of my Sunday brunch! I got to know about these - Garlic Home Fries at my friends birthday party. They tasted sinfully tasty and were an instant hit!

...I have never used 'dried parsley' before and its a bit stronger than the fresh one. Nevertheless, the aroma of these was simply yummy and will make this again for sure!

Here is the recipe...

Garlic Home Fries topped with Cheese

Ingredients:

3 large Potatoes, sliced
1 tsp Olive oil, to drizzle
1/2 cup Mixed Cheese

For Garlic Sauce:

2 large Garlic cloves, finely mince
1/4 cup Olive Oil
1-2 tbsp Cornstarch
2 tsp dried Parsley, finely chopped
Lemon juice for taste
Salt
Water, if needed

Preparation:

Step 1: Preheat oven for 400 F. Place the sliced potatoes on a baking sheet and evenly drizzle some olive oil over them. Bake for 20-22 minutes, until they soft and golden brown.

Step 2: In a small bowl, whisk in the ingredients listed for 'Garlic Sauce' and keep aside. Transfer the baked fries into a mixing bowl and stir in the garlic sauce. Set aside for 5 minutes, to blend in the flavors.


Step 3: Now, in a small baking dish, spread a layer of garlic fries and top with some mixed cheese. Bake until the cheese melts.


Serve hot!

September 23rd 2008 marks the twenty-fifth birthday of 'yours truly'..:) and without any doubt, this is my best ever! I was lucky enough to squeeze out and spend some time with 'S' and
here is my birthday cake...



...and here I am with a glass of red wine, which I tasted for the first time! ..:))



...and guess whats the birthday gift for me..... an IPHONE 3G!!! Yohoooo!! .. it was a surprise gift from 'S' and do I have to mention - How excited I was..:)

...indeed these are some memorable moments to remember.

Revisiting Childhood Memories: Nimbu Masoor Dal

Being a working mom is not that easy, especially when you have two kids to take care of. My mom did it! Every single day she managed to cook up whatever we ask for..:)..

Nonetheless, there were those days when she used to feel extremely tired...and within minutes my mom wud make this yummy, tangy masoor dal which tastes no less than heaven. Today, I came tired from office and had zero patience to cook an elaborate meal, so thought to give my mom's simple dal a try!

Verdict: Its a simple yet one of yummiest dals I ever had..:D

Nimbu Masoor Dal

Ingredients:

1 cup Masoor dal (split)
2-3 tbsp Lime juice
1 Tomato, whole
1/2 medium Onion, chopped
2 Green Chillies
1/2 tsp Chilli powder
Salt to taste
1/8 tsp Turmeric
1 tsp Cumin seeds
1 clove Garlic, minced
2 tsp Butter (or) Oil

Preparation:

Step 1: Give masoor dal couple of washes, - the water must turn clear. Transfer the dal into a pressure cooker with 2. cups of water and a whole tomato until two whistles. Let it cool.

Step 2: Melt butter in a saucepan and saute cumin seeds, chopped onions with garlic. Mash the whole tomato in a bowl and add the mixture with cooked dal. Cook for 3-4 minutes on medium-low heat.

Step 3: Add slit green chillies and season with salt, turmeric and chilli powder. Turn off the heat and finally add the lime juice. Mix the contents well and Serve with hot rice or roti.

AWED: Banh-Mi Style Vietnamese Sandwich

I love participating in food events for the very fact - they challenge and push you to experiment! that's what happened yesterday. To be very honest, I have no clue about 'Vietnamese' cuisine, except for the fact that they use a lot of fresh herbs and vegetables in their cooking. (thanks to my office colleague, who is from Vietnam).

After much googling, I narrowed in to make this 'Banh-Mi Style Vietnamese Sandwich' and to describe in one word how it tasted - "Out of this world". My roommate, who is a calorie-conscious person, couldn't stop for one and served herself the second one..:)

Banh-Mi Style Vietnamese Sandwich (Adapted from here)

Ingredients:

- 2 mini Ciabatta bread rolls (or any other bread)
- Assortment of vegetables:
Zucchini
Carrots
fire roasted bell peppers (store bought)
Tomato, sliced
Onion, cut into rings
Broccoli slaw
Cucumber, cut into discs
Coriander
- Mixed shredded cheese, handful
- 2 tbsp Rice Vinegar
- 1 tbsp Olive Oil

For sandwich sauce:

- 2 tbsp Lime juice
- 2 tsp Soy Sauce
- 1/2 tsp toasted Sesame Oil
- 2 tbsp Canola Oil
- 1 tsp Sugar
- 1/3 cup Water

Method:

Step 1: Preheat oven for 350 deg F. Place thinly slit Zucchini pieces on a baking dish and drizzle some olive oil on them. Bake for 15-20 mins.

Step 2: In a bowl, stir in the rice vinegar, some lime juice and cold water. Soak carrots and onions for 10-15 mins.

Step 3: Meanwhile, mix in all the ingredients listed for 'Sandwich Sauce' above in a small bowl. This is an unbelievably simple yet yummy sauce I have ever made.

Step 4: To assemble the sandwiches: Sprinkle some sandwich sauce on each side of bread and place baked Zucchini first, then some tomatoes, cucumber, marinaded carrots & onions. Drizzle some more sandwich sauce and place rest of the vegetables over it. Finally top with some mixed cheese and microwave (or bake) it until the cheese melts. (approx 30 seconds). Close with the top and Serve warm..:)
