[VeganMoFo 2016] Spinach and Green Onion Mashed Potatoes Recipe


I am still in a state of shock after what happened yesterday. How did it happen? How could it happen? I am not an American to understand the nuances of the Electoral Collage system in detail but I do know that Hate Cannot Win! Sadly it did. Way back in July, Michael Moore predicted Trump's win and gave 5 reasons in plain simple english . I happen to read it today and yes, it made perfect sense, though it is too late now. Here's hoping the next 4 years will be remembered for growth, progress and spreading positivity instead of spewing hatred on each other.

Coming to today's recipe, the title says it all - Green Mashed Potatoes! I saw Mark Bittman make this dish with dandelion greens which I conveniently with some spinach and spring onions. Any kind of greens will work and do make this for upcoming Thanksgiving to surprise your family & friends. Bon Appetit. 





 Spinach and Green Onion Mashed Potatoes

Serves: 4

Ingredients

2 large potatoes, peeled and cut into quarters
salt to taste
1 pound spinach (original recipe used dandelion greens), washed
1/2 chopped green onion, white & green parts
1/2 cup extra virgin olive oil
freshly ground black pepper
1 cup homemade or store-bought bread crumbs

Preparation

Put potatoes in a large, deep pot and cover them with cold water. Add a large pinch of salt and bring to a boil. Cook until soft but not falling apart, 15 to 30 minutes. Remove with a slotted spoon and drain. Meanwhile, add spinach to water and cook for about 1 minute. Rinse under cold water. Drain well, then roughly chop.

Heat oven to 400 degrees. Mash potatoes with a fork or potato masher, adding about 1/4 cup olive oil to moisten them well. Mash in the greens (spinach & green onions), adding more olive oil as needed. Sprinkle with salt and lots of pepper.

Put potato mixture in an ovenproof dish and top with bread crumbs. Drizzle rest of the olive oil, sprinkle with salt and pepper, and bake until bread crumbs are golden brown, about 15 minutes. Serve hot or warm.
