How To Make Fresh Tomato Basil Sauce Recipe


It was a balmy Sunday morning yesterday where I woke as usual, all geared up to get a few things done on my todo list and was sipping my morning tea when a realization hit like a thunder. If I do my math right, the year 2007 was when I first started blogging; that means this year marks the 10th year anniversary of my food blogging. OMG! 10 years? I have never done anything consistent for that long, ever. I am known to my friends and family to feel super excited about something and getting easily bored after an year or two. No! I thought. I can't abandon my blog anymore. Blogging has given me a sense of purpose when I needed the most, good friends who saw me stumble & grow and gave many cherished memories that still make me smile. I promised myself to blog consistently from now onwards.

I might not be blogging since past few months but I have been active on Instagram where I am sharing my adventures with latest love - Bullet Journalling. In the kitchen, my meals these days are quick and make ahead like today's recipe - Fresh Tomato Basil Sauce, which can be used in a number of different ways like pasta sauce, pizza sauce or even as a base for a quick soup. I am a huge fan of beans and whenever I see a new variety in Farmer's Market, I quickly grab some to try a recipe or two. A bag of Christmas Beans (as pictured below) was one such impulse buys. Aren't they just beautiful to look at? How can one not buy? :-) Today's post is all about how to prepare and cook dried beans from scratch. Once you get the basics right, it is so much easier (and healthier) than canned version (with their absurd amounts of sodium levels). Personally, I think cooked beans also make a far more delicious meal than canned beans. There is also a information on how to store/freeze cooked beans with a few pretty photographs to look at. ..let us preserve some summer sunshine by making this vibrant sauce..
Summer is here. Farmer's Markets across Bay Area are bustling with tomatoes at their absolute best and also cheapest. Summer tomatoes are so much juicier and better when compared to their ghostly, almost powdery versions of the Winter. And Now is also the best time to get to work towards preserving a little sunshine by making a batch of homemade tomato sauce and freeze in a small containers, for later use. Not necessarily for colder months to come as I am pretty sure these will be used way before that. Almost every Indian curry starts with an onion-tomato base and this sauce  compliment well with all of them. 

Today's tomato sauce recipe is a South Indian version I stumbled upon in Madhur Jaffrey's 'Vegetarian Cooking' cookbook. The ingredients are basic pantry staples and the resultant sauce is very flavorful and aromatic. For this recipe, there is no blanching or peeling of tomatoes required. Just roughly chop them into chunks, mix in other ingredients, use some muscle power and let it simmer until it reaches a sauce-like consistency. Cool, blend and store/freeze. That is it. No fancy equipment except for a blender to puree the tomato-ey mixture.

Cooking a perfect pot of brown rice (to me at least) is the holy grail to healthy and tasty eating. For many years now, since the time I started to cook my own meals, mastering the art of cooking brown rice just like our beloved white rice has been nothing less than a quest in itself. A simple google search every time led to some good and many bad results. The most popular of all is this recipe published on Saveur in 2008 where it suggests to cook brown rice just like pasta, in tons of salted water (1 cup of rice needs 12 cups of water!!!).

...there must be a better way, I thought and trust me indeed there is!

..and I wanted to make some of my own pasta for a really long time, though a box of dried penne, spaghetti or farfalle is a beloved staple in my pantry. I love them so much that every time I watch a food or travel-based show based on Italy, I imagine myself rolling out a sheet of dough and making long pasta ribbons out of it. Such was my craziness!

After reading quite a few blog posts on the internet and flipping through Mark Bittman's book - How to Cook Everything Vegetarian cover to cover, last weekend I ventured into the kitchen to make atleast two kinds of fresh pasta. By the end of the day I was super thrilled with the fantastic results. Here I am sharing the first batch of pasta I made - Orecchiette, the easy way.

How to Cook Brown Rice Perfectly Every Time [In Oven]

Who said 'resolutions' can be made only at the beginning of the year??. (or more precisely on January 1st). I made one last Sunday. - to consume white rice just once a week or less. It is my humble start for a healthy living. That means my plain-old-white-rice will be replaced by all kinds of whole grains.

First in such series of posts is - to cook a perfectly cooked, fluffy, tasty 'Brown Rice'. Look no further, below is one such recipe which is absolutely 100% fool-proof and the variations that can be made out of it are countless.

Here are some ideas, just to get you started:

- Instead of olive oil, add butter like the original recipe suggested & replace brown rice with a medley of brown rice and wild rice.
- Use Vegetable broth instead of water for more dense flavor.
- Add any kind of veggies , fresh garlic, tomato paste, flavored oils and/or herbs such as dill, parsley etc to give the dish a whole new twist.


...the flavor possibilities are practically endless!!!.

Baked Brown Rice

It is a known fact that brown rice is much healthier than plain-white-rice. To create white rice, both the germ and the inner husk (bran) of the grain are removed, it is then polished, usually using glucose or talc. Therefore the loss of good nutrients and fiber is substantial. So, that has to make us wonder - "Whats the point of eating such a thing?". Isn't it? Majority of us refrain from using brown rice because - We just don't know how to cook a bowl of brown rice perfectly. Now, you donot have that excuse anymore. This simple recipe takes only 5 minutes to prep and baked in the oven for 1 hour (unattended) should get you started onto making one.. It definitely did for me. :-)

Adapted from Alton Brown's recipe

Preparation -

1. Preheat oven to 375 F.

2. Place 1.5 cups of brown rice (I used basmati variety, but short or medium grain can be used) in a baking dish.

3. In a covered sauce pan, bring 3 cups of water, 1 tbsp of olive oil and 1 tsp of salt to a rolling boil. Pour it over the rice, add some chopped cilantro leaves and stir to combine. Cover the dish tightly with aluminum foil and bake it (in the middle rack) for exactly 1 hour.

 4. After 1 hour, remove foil, fluff the rice with a fork and it is ready to Serve with almost anything.

..now no more half cooked or burnt or crunchy brown rice for dinner. Follow this simple recipe for a bowl of perfectly cooked brown rice. Replace this with wherever/whenever you crave for white rice, like I do for that extra ounce of fiber that you need to get going all-day!.
