Strawberry Cake Recipe


I was in Munich (Germany), far away from home when I first read about this recipe on Rev's blog. My immediate reaction was oh-my how beautiful does that look and next was - damn! why am I not home to bake the cake right away! Once I came back, I jumped on the first opportunity and made it - not once but twice in a row. It was that delicious. Sprinkling some sugar on top just before baking is a lovely idea to caramelize the top and to turn the strawberries into a goo-ey mess which are sneakily delicious. It is time to join the Strawberry Winter Cake Movement. Wohoo!

Nothing spells like #yum that this ridiculously easy berry cake. Trust me! :-)

Holiday Baking Recipes | Mini Plum Upside-Down Cakes


I close my eyes and I see a winter coat. Furry, soft, black my favorite color when it comes to coats. The nostalgic dream doesn't end there. We are in a big garment factory and there we are standing in front of aisles of coats. Beautiful ones getting ready to be worn for the upcoming winter. It will be my first winter in US and am secretly praying there will be snow, lots of it so that I could make a snow man.


On that day, after much prodding from my roommates I chose a woolen coat with big buttons but sadly the price was exorbitant. Not something I could afford with my meager salary from working at our University food court. But my heart pleads to go for it...and I did. I was a proud owner of my first ever black furry coat. For many many winters after that, I remember digging my mitten-covered hands into its pockets and walking on snow filled streets. Many coats came later that but the memory of shopping for my first one is always special. :-)


Just like in the 90's, I am still obsessed with fresh or dried aloo bukhara. This ruby colored fruit is from plum/prune family and is a bit tart + sweet to taste. Biting into it takes me back to my grandmom's house where she used to bring home these luscious fruits every time they are in season. Few months ago, a good friend of my dad sent us a bag full of freshly harvested fruit from his backyard. Resisting the urge to eat them right way and making the usual jams or chutneys, I made few upside down mini cakes with them which turned out to be super moist and delicious. :-)


Mini Plum (Aloo Bukahra) Upside Down Cakes

Since the fruit is pre-cooked in the sugar syrup before hand, it becomes slightly mushy once taken out of the ramekins. But it tastes yumm nonetheless and the fine balance of flavors made the effort well worth it. Any other firm seasonal fruit available on hand can be easily substituted in this recipe. 

Makes 6 mini cakes + 3-4 cup cakes

Ingredients:

For the cake batter:

2 cups all purpose flour
3/4 cup softened unsalted butter
1 cup sugar
1 tsp baking powder
1/2 tsp salt
2 eggs
2 tsp vanilla

For the topping:

1 tbsp unsalted butter
2 tbsp sugar
1 cup plum wedges

Preparation:

1. Melt a tbsp of butter, sugar and add plum wedges. Mix well until they are even coated and cook for 2 to 3 mins. Turn off heat.


2. Sift together flour, baking powder and salt. Whisk to combine. In a mixing bowl, cream butter and sugar until fluffy. Add eggs and vanilla.

3. Beat well for 2 to 3 mins on medium speed using electric mixer or whisk rigorously with hand.


4. Add flour mixture half cup at-a-time and Mix everything until just combined.

5. Preheat oven to 350 F or 180 C. Grease ramekins with butter and place a layer of fruit at the bottom. Top with few spoonfuls of cake batter and evenly distribute it.


6. Place these ramekins on a baking sheet and bake for 25-30 minutes until golden brown and a tooth pick inserted in the center comes out clean. Allow to cool for a 5 to 10 minutes. Gently invert each ramekin and unmould the cakes. Serve.



I had just a few spoonfuls of cake batter and plum wedges left. I applied the same technique of layering the fruit at the bottom, topping with batter and baked for 8 to 10 mins until a tooth pick inserted came out clean.  These upside-down cupcakes I must tell you were too adorable to eat. :-)

{Valentine's Day Special} Banana Blueberry Butterscotch Pudding Cake - a Step by Step Recipe


 
I have this habit of listening to radio while I work. With music on, my mind is more attentive, works faster and tend NOT to fall asleep. ;-) Being Valentine's day, am having an overdose of sweet, lovey-dovey songs and love stories/poems from radio listeners since morning. Pardon me, am in no mood to talk about it anymore. (I already wrote much in my last post). We all know the importance, so let me just jump right into today's recipe as that's what I am most excited about! :-)

Those heavily freckled, overripe bananas that usually take a permanent space on our cooking counters taste yum in baked goodies. Don't throw them away. Make a pudding cake for a change and treat your friends with this scrumptious dessert. Also note the ingredients list is very similar to what you would want to make pancakes. How about you switch the plans and make this pudding cake for breakfast instead? :-)

Ingredients:

1 cup all purpose flour
1/2 cup blueberries (I used dried. fresh or frozen ones can be used too)
a pinch of salt
1 cup milk
3/4 cup powdered sugar
3 tsp baking powder
1 overripe banana, mashed
1/2 cup unsalted butter, melted
1 egg, lightly beaten
1 tsp vanilla extract

For topping - 1/2 cup brown sugar, 1/8 cup maple or golden syrup and 1/2 cup boiling water

Preparation:

Preheat the oven to 180°C (350°F/Gas 4). Grease the bottom of casserole dish + few ramekins or a big 2.5L baking dish. Keep aside.

In a bowl, add the mashed banana, milk, melted butter, beaten egg and vanilla extract. Whisk together until well combined. Keep aside.

Sift together - flour, salt, powdered sugar and baking powder.


Add sifted dry ingredients to the banana mixture and mix gently.

Toss blueberries as well. Pour the mixture into the greased baking dish.


For the topping, place the brown sugar, maple syrup and water in a small pot and bring to a boil. Reduce it to simmer and let it thicken a bit.

Pour few tablespoons of boiling mixture on top of the pudding and bake it for 25 to 30 minutes or until cooked through when tested with a toothpick.

Serve. I liked the cake plain and simple. You can also try with some vanilla ice cream.

I couldn't wait for long to dig and eat it all! Yum! Oooh,  I simply love overripe banana in baked goodies.

I later also tried Banana Butterscotch Pudding Cake without blueberries or the brownsugar topping.
It tasted equally  delicious! :D

{Delicious and Moist} Apple Cinnamon Buttermilk Cake Recipe

Baking a Cake. Well, I never did it until a few years ago. That's such an amusing thing to admit, now that I am about to share a cake recipe with you all today. You know, my mom was a very conventional cook who stuck to making only traditional, andhra food all our childhood. Our daily dose of bread, cakes, egg puffs (our childhood favorite) came from a local bakery and honestly we never cared for how exactly its made. It was delicious nevertheless. That is it. The story of bread or in fact baking ends there.

Then, I moved to US for my Masters and learnt more things I could have ever imagined during my short stint over there. When we first moved to an apartment in New York, much to my surprise a whole bunch of stuff came with it - a fridge, a micro wave, carpeted floors and an oven. I always wondered what would people do with it. That was my level of ignorance! ;-). Then, just out of curiosity I googled and slowly yet steadily learnt my way through about how to use it. It was an interesting process which lot more of burnt cakes you can imagine and smoke alarms that fire off almost every single time. It was embarrassing and exhilarating at the same time. With each failed attempt, I knew I was getting closer, not knowing where exactly I want to reach. Luckily enough, I took a part time job in our univeristy food court and there I was given the task of making pizza, right from scratch. I kneaded, stretched dough using all my muscle power, grated cheese, chopped onion, tomatoes, bell pepper and sometimes meat too. That's how I learnt how to make a my first pizza! (Wish the world knew about  Jim Lahey's recipe No Knead Pizza by then.)

My first cake (after many failed attempts) which I published here on the blog was - Blue Agave Cake with Nuts, Ginger and Lemon (sugar less and makes use of agave nectar) and I still remember its taste. Things were a little control by then and I started to trust my baking skills. The next was a Tutti Frutti Cake, I baked for my sister's birthday. My aunts, my uncles simply loved it. That's when I made a promise to myself that I will bake a cake for birthdays of each of my loved ones.

It was my mom's birthday at the end of December and to celebrate the abundance of apples which were readily available in our local markets, I made an Apple Cinnamon Buttermilk Cake for her.



Apple and Cinnamon are like a match made in heaven. A bowl of oatmeal to a doughnut, this combination never fails to impress. If you are unsure of where to start for learning how to bake a cake, I recommend this recipe.  The step by step pictures below should help you a great deal about the process.

{Recipe} Apple Cinnamon Buttermilk Cake

Adapted from Pinch My Salt
Serves 6-7 
Start to Finish: Less than 1 hour.

Ingredients:

1 apple, chopped into thin slices
1/4 cup chocolate chip cookies
1 cup all purpose flour (maida)
1 egg
1/2 cup buttermilk
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt (skip if using salted butter)
4 ttbsp unsalted butter (1/2 stick), at room temperature
2/3 cup sugar

For topping - 1 tsp brown sugar + few pinches of cinnamon powder

Preparation:

Step 1: In a medium bowl, whisk together flour (sift if there are lumps), baking soda, baking powder, cinnamon, and salt. Set aside.  In a separate bowl, beat butter and sugar with an electric mixer until pale and fluffy for about 2 minutes.  Add vanilla and egg and beat well.



Step 2: Preheat oven to 400 F or 200 C. Butter generously the bottom of a cake pan (9 inch or 8 inch) and sprinkle flour. Alternatively, you can place a parchment paper in the bottom of the pan and then pour the batter evenly.

Step 3: With the mixer on low speed, beat in 1/3 of the flour mixture. Add half the buttermilk and continue beating on low speed until incorporated.  Scraping down sides of bowl as necessary, beat in another 1/3 of flour mixture then remaining buttermilk.  Finally beat in the last 1/3 of the flour mixture until just combined.


Step 4: Add in the chocolate chips into the cake batter. Scrape batter into the prepared cake pan, smoothing the top with a spatula.  Scatter apple slices evenly over the top of the cake batter then sprinkle with brown sugar and cinnamon.


Step 5: Bake until cake is golden brown and a toothpick when inserted in the center comes out clean. It will take around 25 to 30 minutes.  Cool in the pan for ten minutes, then turn out onto a wire rack to cool until warm. Invert onto a plate.


Serve as-is or with whipped cream on side.

Happy Birthday: Tutti Frutti Cake | Indian Plum Cake Recipe

 
Five years ago, an angel was born. Words can't express how much happiness and joy she brought into our lives.

She is Shriya, my niece.

It feels like yesterday when she was so tiny that she barely fit into both of my hands. Now, she can talk non-stop, make you really think and many at times, stump you with questions which we barely can answer. One Curious George this kid has grown into. ;-)

Sadly, this year I am not with her to celebrate and squeal for her birthday. Hence, gifts were sent with loads of love & kisses from her uncle and aunt along with this Tutti Frutti Cake, which I am sure she would have totally loved.

So here I am celebrating Shriya's birthday virtually atleast , with all of you. 

Love you baby. 


This is such a splendid recipe for a moist cake with just few tablespoons of butter. I made two loaves (doubling the original recipe). One was for my family here in Hyderabad and other for office colleagues in Bangalore. All of them loved it and went for seconds. Just perfect for any occasion and anybody, especially for kids.

{Recipe} Tutti Frutti Cake | Indian Plum Cake

Makes two loaves - one for round 9 inch cake pan and another for 9 inch loaf pan. This recipe can be easily halved for just one cake.

Ingredients:

4 cups all purpose flour/maida
2.5 cups granulated white sugar
1 cup tutti fruitti pieces (these are chopped, candied fruit pieces)
4 tbsp unsalted butter, softened
2 cups milk
4 eggs, at room temparature
2 tsp baking soda
4 tsp baking powder
6 tsp vanilla essence
few mixed nuts like cashews, walunts etc, to sprinkle on the top

Preparation:

1. Sieve flour, baking powder and baking soda. Mix tutti frutti pieces with little flour and keep aside.

2. In a large mixing bowl, mix butter and sugar. Using at electric mixer or whisk, add one egg at a time and beat well until creamy. Add vanilla essence and milk. Mix well.

3. Add flour+baking powder+ baking soda mixuture one cup-at-a-time, mixing with spatula scraping through the edges each time. Fold in tutti frutti.

4. Preheat the oven to 180 degrees C. Grease the pan with butter and flour, tap to remove off excess.

5. Pour the batter in the pans and pat it on floor to ensure the batter is evenly distributed. Bake for 35-40 mins until a tooth pick inserted comes out clean. Once out of the oven, cool completely on a wire rack and then serve.

[Update- August 7th 2012] - I made an eggless version of this cake for my little sister's and cousin brother's birthday by substituting 2 eggs with 200ml of sweetened condensed milk and reducing the sugar to 5 tbsp. Everybody loved the cake and were thrilled to know if was eggless, especially my aunts who are staunch vegetarians. Here is a pic from the celebrations.

Blue Agave Cake with Nuts, Ginger and Lemon

I have a little announcement to make, before I go ahead with my post today. Finally, after a lot going back & forth, I have got a domain name for myself and it took 3+ years for me to do that!. So, from now on, this little, tiny tot will be called as 'Cooking with Siri' - www.cookingwithsiri.com (instead of Siri's Corner, as it was formerly known).

The same holds good not only for *food writing* but for any new (ad)venture that we take upon. Isn't it. As somebody, who runs this blog all-alone (like many others out there) - from being a recipe developer to chef to food stylist to food photographer, it takes immense amount of time & effort to slowly master each one of the fields. And I think, taking good photographs is the key for running a successful blog. It is important to engage and entice the audience which would make them want to rush to their kitchens to whip up the dish for themselves.

I have to say - am taking baby steps towards becoming a good photographer and to enhance my skills and to get a new viewpoint about how to take good photographs, I recently attended a day-long Food Photography Workshop, here in San Francisco, organized by Digital Media Playground and Danielle Tsi. It is always fun to meet some fellow bloggers who share the same passion for food and its photography. Here is a flickr stream that Denise has put together from the photos taken at the workshop.

..Now let's see what is cooking in my kitchen tonight, Shall we?

It is sugarless, butterless cake made with whole wheat pastry flour, fresh ginger, nuts and dried fruit. To give some sweetness to the cake, I have used - for the first time, some Blue Agave Sweetener (can be easily substituted with honey as suggested in the original recipe).

According to wikipedia article - "Agave nectar (also called agave syrup) is a sweetener commercially produced in Mexico from several species of agave, including the Blue Agave (Agave tequilana), Salmiana Agave (Agave salmiana), Green Agave, Grey Agave, Thorny Agave, and Rainbow Agave.[1][2]  Agave nectar is sweeter than honey, though less viscous...."

Yes, I did feel this was bit sweeter and less syrupy than our regular honey. A lot has been said about this blue agave syrup in recent times. It is topic of debate - with some saying it is a healthy alternative because of it low glycemic index but some argue - the agave syrup available in markets right now has high amounts of corn syrup which doesn't make it any better than our regular sugar.

But, I believe Sugar at the end of the day is S.U.G.A.R. - whether we get that from honey or brown sugar or regular white sugar or this blue agave nectar, it doesn't matter. Enjoying it (in any form) in moderation is the key and you don't need worry about anything else!


Blue Agave Cake with Nuts, Ginger and Lemon

Honey was replaced in this cake with the Blue Agave Sweetener truly for experimental purposes and I loved it. I made two loaves - one for my dear husband & other for my  colleagues at work. All of them gave thumbs up to it and I am a happy girl at the end of the day! After all, it is holiday-time. Make this for this Christmas or New Year and spread some healthy holiday cheer around.

Ingredients:

1 3/4 cups of wholewheat pastry flour (or All purpose flour works too)
1 cup blue agave sweetener or use honey
1/4 cup chopped pecans or use any nuts that are available in your pantry
1/4 cup dried cranberries + dried blueberries
1 cup warm milk
1/2 cup canola oil
1 tsp vanilla extract
3 tsp of baking powder
1/4 tsp salt
1/2 tsp cinnamon
2 tsp fresh ginger, grated or finely minced
zest of 1 large lemon
2 eggs (replace with applesauce to make it egg-less)
1 tsp of finely chopped almonds (for the topping)

Other topping ideas - Sprinkle confectioner's sugar or toasted coconut or chocolate curls or chopped roasted nuts.

Preparation:

Step 1. Preheat oven to 350 F, rack in the middle. Grease a loaf pan or a cake pan with oil spray. Keep aside.

Step 2.


Dry ingredients: In a large bowl, mix in whole wheat pastry flour with baking powder, salt, cinnamon, fresh ginger and lemon zest.

Wet Ingredients: In a bowl, Whisk for atleast 3-4 mins, eggs and blue agave nectar or honey until they are slightly emulsified (well combined into a brownish liquid). Slowly, in a steady stream add warm milk. Add oil and vanilla extract. Mix well, one final time.

Step 3: Mix with a wooden spatula, the dry ingredients to the wet ones, little at-a-time. Don't worry, batter may be a little thin. Fold in chopped nuts and dried fruit. Mix once.

Step 4: Pour in the greased loaf or cake pa. If using chopped almonds (or any nuts) as topping, sprinkle them on the cake.Bake for 40-45 mins. (depending the size of your pan), until the cake is puffed and deep golden brown. Mine was done in 38 minutes.

Doneness test - A toothpick inserted in the center of the cake will come out either clean or with only a few crumbs clinging to it.

Step 5: Cool for 10 minutes. If using confectioner sugar or toasted coconut or chocolate curls, sprinkle on the top of th cake. Serve.
